Summer Picnic & Pig Roast a Success

The Prairie Riders summer picnic — a pig roast — was held Saturday, August 28, at the home of Dave and Helen Goldman. For this family-friendly event, the Goldmans set up a track for the kids to ride go-karts, a 120 or a mini ATV. Space Walk of Salem provided a bounce house for the kids. Adults and kids alike also could enjoy volleyball, bocce, horseshoes and other picnic fun.

Judy Pietkiewicz headed up the picnic planning with ample help from Lauren Pietkiewick, the Goldmans, Arlyn Baumgarten, and the Goldmans' neighbor Myron. Many thanks to all who helped make such a great party!

We may not be able to get the pig (or the help to cook it) for the picnic.  So start brai nstorming ideas for food.  We want it to be cheap and easy to make.

Burgers, brats and the usual sound good to me. Or chicken. Billy and I have an easy grilled chicken recipe that uses Italian dressing to give it some snap.

Judy says the pig is back on the menu. I guess that's "Sorry Pig, Congrats Cow"?
