Summer Picnic an August Success

picnic 2010The Prairie Riders summer picnic was held Saturday, August 20, at the home of Dave and Helen Goldman. For this family-friendly event, the club offered a mini ATVs, bag toss, volleyball and a bounce house for the kids as well as a pinata.

Adults and kids alike also could enjoy volleyball, bocce and bag toss. The event ended with an exciting helmet toss contest (men's, women's and children's divisions) that was decided by a toss-off between Jody and Bart. Congratulations to Gavin, Kim and Jody on their wins.

Good food and drink was in ample supply. Chefs Arlyn and Myron cooked up deep fried turkeys, beer can chicken and yummy grilled corn on the cob, and club members brought a diverse range of dishes, including potato salad, pasta salad, beer dip, grape salad, snickerdoodles, baked beans and cakes and cookies.

After everyone ate and drank all they could, and evening fell, some gathered for a bonfire in the yard. Unfortunately, the rain that had held off all day finally fell in the evening hours, dampening the campfire fun. Still, a great day was had despite a wet and gray start to the day.

Judy Pietkiewicz headed up the picnic planning with help from Lauren Pietkiewicz, the Goldmans, Arlyn Baumgarten, and Linda Becker. Mark your calendars for next year and make plans to enjoy a great party!

Here's mine (Linda B.)

Grape Salad with Walnuts

2 lb red seedless grapes
2 lb green seedless grapes
8 oz Neufchatel cream cheese, softened
8 oz light sour cream
1/4 to 1/2 cup Splenda

Topping
1/2 cup Splenda brown sugar blend
1 cup chopped walnuts

Clean, rinse and *dry* (very important!) grapes. (I just put mine in a big towel, cover with the other half, and rub and roll around a bit.) Place in a large bowl. In another bowl, mix cream cheese, sour cream and Splenda. Once well blended, stir in to grapes to coat well. In another bowl, mix the brown sugar Splenda and walnuts. Mix through grapes; reserve some for topping if desired.
